Mire Poix – Poached Egg in Spicy Tomato Sauce

 2 cups diced onions
 1 cup diced red peppers
 1 cup diced celery
 1 seeded and minced jalapeno
 2 tbsp olive oil
 1 tsp oregano
 1 tsp cumin
 1 tsp chili powder
 ½ tsp salt
 ¼ tsp pepper
 ¼ tsp cayenne (optional)
 28 oz crushed tomatoes
 ½ cup water
 2 tbsp maple syrup
 ¼ cup cilantro
 4 eggs

Dice onions, peppers, celery. In large deep skillet sauté fresh vegetables in olive oil 5- 8 minutes till softened and slightly browned. Add cumin to vegetable mixture and let "bloom” for one minute till you can smell the cumin.

Add oregano, chili powder, salt, pepper, cayenne, tomatoes, syrup and water.

Simmer mixture uncovered for 20-30 minutes until thickened. Crack 4 eggs into ramekins. Make small indent in sauce and slip egg into indentation.

Cover and cook 6 - 8 minutes until whites are set and yolks are thick but runny. Sprinkle with cilantro. Scoop out the sauce into a bowl first then top with a poached egg.
