Fish Tacos with Slaw

 1 lb white fish (for 6 tacos)
 Oil for pan
 Marinade
 Corn tortillas
 Slaw (homemade)
 Optional toppings: Salsa, mango slices, pomegranate seeds or avocados
Mexican Marinade (for 1lb of fish)
 3 tbsp oil
 2 tbsp lime juice
 1 tsp minced garlic
 2 tsp chili powder
 2 tsp cumin
 1 tsp paprika
 1 tsp salt

Mix all ingredients of marinade in a small bowl. Pour in a bag.

If using thicker fish cut into strips before marinating. Thin fillets can be placed in marinade as is. Let fish sit in marinade for at least 30 minutes.

Mix slaw if using and cut up any optional toppings.

Warm pan and add a small amount of oil. Carefully sauté marinated fish 2-4 minutes depending on fish thickness. Fish is done when it flakes easily

Lightly warm corn tortillas.

Place fish in warmed tortillas, add slaw and desired toppings. Enjoy!

Tips: Fresher tortillas can be purchased at local Mexican grocery stores.
