Preheat oven to 425
Rinse chicken and let dry. The oil and spices will stick better to a dry chicken.
Using scissors, cut back bone out by cutting next to the backbone on each side.
Flip chicken over, press down on breast bone to flatten chicken.
Oil chicken all over, then sprinkle with salt and pepper.Tuck wing tips under chicken so the tips don't burn.
Place chicken on sheet tray with a wire rack.
Roast at 425 for 45-50 minutes, until temperature of breast is 160 and once out of the oven the temperature should rise to 165. Continue to let rest for a total of 15-20 minutes.
