Wash hands and rinse produce
Mix 1 tablespoon oil, vinegar, miso, ginger,garlic,coconut aminos, maple syrup,and sesame oil in bowl to make miso mixture. Set aside.
Cook soba noodles for 7 minutes in salted water. Rinse with cold water and drain. Once drained, combine noodles and 1/4 cup miso mixture. Set aside.
Add oil to skillet, add mushrooms and asaparagus , then saute for 4 minutes. Add last of miso mixture and toss to coat. Arrange 1/2 of noodle mixture in each of two bowls for a main dish. Plate up a quarter of the noodle mixture as a side.
For entree add 8 oz cooked tofu, pork or shrimp.
