Sheet Pan Chicken and Vegetables

 4 Chicken breasts
 Olive oil
 Salt & Pepper
 1 cup Zucchini
 1 cup Summer Squash
 3 cups Pepppers (colored)
 1 cup Onion (red)

1. Preheat oven to 400 degrees.
2. Wash hands and produce.
3. Line two sheet trays with parchment paper if using.
4. Cut vegetables into same-sized pieces. Place in a bowl and toss with olive oil, salt and pepper. Place on a sheet tray..
5. Place raw chicken inside a gallon zip-lock bag, pressing out as much air as possible. Pound the chicken flat evenly with a mallet or rolling pin. Once flattened, place in a bowl and toss with olive oil, salt and pepper. Place on a sheet tray with vegetables. Wash hands.
6. Place sheet trays in the oven for 40 minutes, or until the chicken reaches 165 degrees. Let chicken rest 10 minutes before serving.

TIP:
As long as all the vegetables together equal 6 cups, you'll be fine.

Side suggestion:
Instant Pot Brown Rice
Spray bottom of stainless pot.
Set knob to seal.
Add 2 cups rice and 3 cups water or stock.
Set timer for 10 minutes.
Natural release for 10 minutes, then release pressure.
Remove top.
Fluff and serve.

Makes 4 cups rice
