Preheat your oven to 400 F. If you are using parchment paper, now is the time to line your sheet pan. Talk about easy clean-up!
Wash your cauliflower, wipe mushrooms with a damp paper towel (and wash your hands).
Cut cauliflower into florets.
Place the cut cauliflower into a large mixing bowl, and toss with 2 tablespoons olive oil, salt, and pepper. Transfer to your lined sheet pan, leaving a bit of room for the mushrooms. Place in oven and start roasting. Set timer for 10 minutes.
Using the same bowl, toss mushrooms with olive oil and salt. After the timer for cauliflower goes off, add mushrooms to the sheet pan. Return to oven. Reset the timer for 20 more minutes.
Serve immediately and enjoy!
