Sautéed Roasted Beets

 1 tsp coconut oil
 ¼ cup onion diced
 1 tsp garlic, minced
 2 cups roasted beets, cubed
 1 tsp apple cider vinegar
 1 tsp soy sauce or liquid aminos
 2 cups raw spinach
 salt and pepper

Roast beets, peel when done and cut into chunks

Put coconut oil in warm sauté pan and sauté onions lightly for three minutes, add minced garlic and sauté 30 seconds more.

Place cubed beets in sauté pan adding apple cider vinegar and soy sauce till warmed. Add spinach until wilted. Dish up immediately and garnish with a balsamic glaze
