Roasted Golden Potatoes with Herbed Butter

 1 lb Yukon Gold potatoes
 Olive oil
 Salt (to taste)
 Pepper (to taste)
Herbed Butter
 4 oz Butter
 1 tbsp Fresh Rosemary, minced
 1 tbsp Fresh Thyme, minced

1. Wash hands and produce
2. Cut potatoes in bite-size pieces. Keep potatoes in cold water until time to cook.
3. Boil potatoes in salted water until fork tender. While potatoes boil, prepare herbed butter.
4. Preheat oven to 400 degrees. Drain cooked potatoes and allow to dry for 5 minutes.
5. Transfer cooked potatoes to a bowl and coat with oil, salt and pepper. Spread on a sheet pan and roast
for 20 minutes, then stir and roast for 20 minutes more..
6. Melt butter and stir in herbs, toss in bowl with roasted potatoes to coat.
