Roasted Garlic

 A few large heads of garlic
 Parchment paper
 Aluminum foil
 Olive oil
 Salt

Cut foil and parchment pieces large enough to cover each garlic head you are roasting.

Cut off the top third of each garlic head.

Layer parchment on top of foil and place one head of garlic in the center.

Drizzle olive oil into the head.

Season with salt and pepper.

Wrap the garlic completely in the foil and parchment.

Bake at 400 degrees for 45-60 minutes, or until the garlic turns caramel colored and becomes soft.

Uncover and allow to cool.

Easily squeeze each clove out and refrigerate, freeze or use immediately.

To freeze, lay flat on parchment paper lined sheet tray or mix with butter and place in an empty ice cube tray in the freezer. Once frozen, move to freezer bag and enjoy having roasted garlic readily available.
