Polenta with Zucchini Bake

 1 lb Zucchini cut into one inch pieces
 2 tbsp Olive oil
 8 oz Shrimp medium
 2 Garlic cloves or one tablespoon dried
 14 oz Diced tomatoes
 1 tsp Thyme - dried or one tablespoon fresh thyme minced
 1 tbsp Italian Seasoning
 3 cups Water
 1 cup Polenta
 1 tsp Salt
 ¼ cup Parmesan cheese
 1 cup Havarti cheese - diced or shredded
Garnish
 Basil - slivered
TIP: Use 2 cups of any cooked vegetable instead of zucchini

1. Wash hands and fresh produce.
2. Warm one tablespoon of oil in a large skillet. Saute zucchini in oil for 5 minutes. Add the rest of the oil to the skillet and add shrimp pieces, cooking for 5 minutes until 145 degrees. Next, add raw garlic and cook for 30 seconds. Finally, add diced tomatoes and seasonings and cook. After 5 minutes, remove everything in the pan to a bowl.
3. Pre-warm the broiler to high.
4. Add 3 cups of water to the same skillet with one teaspoon of salt. Once the water boils, add polenta and wisk often until thick, about 5 minutes. Remove pan from heat and add parmesan cheese - smooth polenta in the bottom of the pan.
5. Layer cooked vegetables with salmon on top of the smoothed polenta. Top with Havarti cheese. Place under broiler, observing for 3 - 5 minutes. Remove from broiler and garnish with basil.
