Pickeled Onion

 1 onion-small
 1 cup vinegar- (apple cider vinegar is my favorite)
 1 tbsp salt
 1 cup hot /boiling water
 2 tbsp maple syrup
Optional
 5 pepper corns

Wash hands.
Cut onion thinly, and use a mandolin if available. Place red onion slices in a pint canning jar.
Mix hot water and salt, and maple syrup until salt is dissolved. Then add vinegar to the mixture and let cool. Pour the cooled liquid mixture over the onion slices in the jar, ensuring all onions are covered with the brine mixture. Add peppercorns if desired.
Cover jar and place in the refrigerator. Let sit for at least a few hours before using it on toast, tacos, sandwiches, or salad.
