Peach and Blueberry Salad

Ingredients

Makes two entree salads
4 cups Assorted Greens
Fresh basil or mint – minced
2 Peaches
1 cup Blueberries
Cherries
Goat Cheese – sliced thin
Roasted pecans
Maple Dressing
Variations: Golden raisins, Bleu cheese, Farrow or grain of choice -cooked, grilled salmon or pork.
OPTIONAL: Maple Dressing
¼ cup Maple Syrup
¼ cup White balsamic vinegar
2 tbsp Stone-ground mustard
OPTIONAL: Grilled Peaches
OPTIONAL: Maple Spicy Pecans

Directions

Assemble Salad

Wash hands and all produce

Slice peaches in thinly.

Assemble the salad, starting with a base of greens tossed with a choice of herbs.

Arrange peaches on the salad first, and add cherries, blueberries, and goat cheese.

Maple Dressing

Place all ingredients in a small blender attachment and blend for 45 seconds until completely blended. Or use an immersion blender in a mason jar to mix and store with a tight fitting lid.

Maple Spicy Pecans

Heat oven to 300°. Mix the first four ingredients in a medium bowl.

Once spices are mixed, add pecans and stir until coated. Spread on a sheet pan lined with parchment paper.

Bake for 10 minutes. Sprinkle with fresh nutmeg once the pan is pulled from the
oven.

Grilled Peaches

Slice washed peach in half . Use either a grill pan inside or outside grill.
Brush the cut side with oil to prevent sticking.
Add peach pieces to the hot grill pressing slightly to ensure contact with grill to make pretty marks.
Do not move peaches for 2-3 minutes on each side. Glaze with Maple syrup after taking peaches off of the grill.
