Pan Fried Rice

Yields1 Serving
 1 tbsp Olive oil
 1 Onion medium (chopped)
 1 tbsp Garlic
 3 cups Vegetables (raw or frozen)
 2 Eggs
 ¼ tsp Pepper
 1 tbsp Ginger
 1 tbsp Sesame oil
 ¼ cup Tamari
 2 cups Brown rice (cooked)
 2 Scallions (sliced thin)

1. Wash hands and produce.
2. Cook a plain omelet, tightly roll the omelet and slice. Set aside.
3. Saute' onion in oil for 3 minutes or until onion is translucent. Add garlic and cook for 30 seconds. In the same pan as onions, cook raw vegetables for 5 minutes. If using frozen cook for 3 minutes.
4. Add pepper, ginger, sesame oil, tamari, and cooked rice to the vegetables.
5. Saute' until done; add scallions and rolled eggs before serving.

TIPS;
Raw vegetables: Peppers, onions, diced carrots, zucchini, green beans and cabbage
Frozen vegetables: Bag of frozen peas and carrots
