Orange Spring Salad

 22 oz Cottage Cheese
 20 oz Crushed Pineapple packed in 100 juice or water- drained
 15 oz Mandarin Oranges packed in water- drained
 3 oz Sugar Free Orange gelatin (Dry)
 8 oz Sugar Free Whipped Topping , thawed
 2 tbsp Chia seeds or Ground Flax Seeds

Drain the fruit well. You may want to pat it dry with a paper towel after draining. this is important so the salad doesn't get runny.
Combine the fruit, cottage cheese and dry gelatin in a large mixing bowl.
Fold in the whipped topping.
Chill in the refrigerator for at least an hour or overnight.
Serve the chia seeds and ground flax on the side for folks to sprinkle on top of the salad if they like.
