Mustard Greens with Mushrooms, Onions and Garlic

 1 large bunch of mustard greens (about 5 cups)
 1 onion cut into slices
 1 tbsp olive oil
 8 oz mushrooms, sliced
 4 garlic cloves, minced
 1 tbsp sesame oil
 ¼ tsp salt
 1 tbsp soy sauce or tamari

Wash the mustard greens with cold water. Let them drain. Remove the leaves from the stems and cut the stems into 1-inch slices and leaves into 2-inch slices.

Heat the olive oil and saute the onions, stems, and mushrooms for five minutes. Add leaves, sesame oil, garlic, salt, and soy sauce. Stir until vegetables are tender to taste.
