Grind whole flax seed in a blender. Store unused ground flax seed in the refrigerator to prevent spoiling.
OPTIONAL TIPS:
* For higher domed muffins, let the mix sit overnight in the refrigerator before baking them. This will make the top of the muffin more like a dome instead of flat.
* Baked muffins can be stored at room temperature in a glass container with a paper towel on the bottom for three days. They can also be flash-frozen and then wrapped with plastic wrap.
* I prefer to use cooking spray in a muffin tin instead of paper liners.
1. Wash hands and berries.
