Mediterranean Meatballs

 ½ lb Ground Lamb, Turkey, or Hamburger
 ½ lb Pork Sausage
 ¼ cup Red Onion - grated or minced
 ½ cup Bread Crumbs
 1 egg
 ¼ cup Fresh Cilantro and Parsley - minced
 2 tsp Cumin
 1 tsp Coriander
 2 cloves Garlic minced
 ½ tsp salt
 Freshly ground Pepper

Preheat oven to 400°

Wash hands . Line sheet trays with parchment.

Combine all ingredients in a mixing bowl.

Using a small scoop, shape balls evenly, approximately 1.5 tablespoons for regular meatballs. Place on prepared pan about 1" apart. If you are using the meatballs on pizza, try 1/2 Tablespoon each. Don't make the meatballs too tight.

Bake at 400° for 15-20 minutes until the internal temperature reads 165° on a thermometer. Serve with Yogurt-Cucumber sauce.
