Marinated Pork Loin – Freezer Recipe

 ¼ cup maple syrup
 ¼ cup low sodium soy sauce
 2 tbsp fresh grated ginger
 2 tbsp tomato paste
 1 tbsp cilantro
 2 tbsp olive oil
 ¼ tsp black pepper

Trim any visible silverskin from pork loin.

Wash hands after working with raw meat.

In a small mixing bowl, whisk together marinade ingredients. Transfer marinade to a gallon plastic zipper bag. Place pork loin into the bag, seal securely and place into the freezer.

To prepare the pork loin, remove from freezer at least 24 hours prior to cooking. Thaw the meat in the refrigerator in the marinade.

Preheat the oven to 350 degrees.

Place the marinated, thawed pork loin in a roasting pan covered covered with foil.

Roast in the oven covered for 25 minutes per pound. After 40 minutes, remove foil and roast uncovered until thermometer reaches 145 degrees.

Remove from oven and allow pork loin to rest for 10 minutes before slicing.
