Prep ginger and garlic. Using a whisk, mix all ingredients in a small bowl.
Place raw meat in a ziplock bag with marinade. For cubed tofu place in a shallow dish and cover with marinade. Place protein and marinade in the refrigerator for around 2 hours turning halfway through.
Take meat or tofu out of the marinade. Discard any leftover marinade. Roast meat per directions until fully cooked or saute/air-fry tofu.
Serve immediately.
Use 1/2 cup marinade for 1# of meat.
