Greek Salad Deconstructed

 kalmata, green and black olives
 feta or favorite cheese
 grape tomatoes, sliced
 cucumber slices
 hummus
 cooked chicken breast, sliced, or white beans
 red onion
 artichokes
 red pepper slices
 mixed greens - spinach, red lettuce, frisee or romaine
 parsley and basil, if available
 lemon and olive oil drizzle
 walnuts for crunch

Toss chicken breast in olive oil salt and pepper. Cook on sheet tray at 400 degrees for approximately 35 minutes untill chicken reaches 165 degrees. Cool and slice for salad.

Wash fresh vegetables of choice and dice into bite size pieces. Line up vegetables in separate rows. Have bowl of cleaned greens ready with herbs added. Buy or make hummus, walnuts, cheese and artichokes.

Let everyone pick their choice of vegetables and toppings. serve with soup and a nice crostini.
