Fresh Produce Salad

 2 cups cleaned arugula
 2 cups spinach
 ½ cup sliced shallots
 ½ cup pea shoots
 ½ cup shaved asparagus
 ½ cup rasishes
 ½ cup cucumbers
 ½ cup strawberries
 salt and pepper
 lemon juice
Vinaigrette
 lime juice
 maple syrup
 dijon mustard
 olive oil
 salt and pepper

Clean and dry your fresh greens and produce. Once greens are dry splash with lemon juice, salt and pepper.

Zest and quarter the cucumber

Bias cut: scallions, fresh pea pods and asparagus.

Using mandolin or knife thinly slice radishes

Quarter strawberries

Place greens on plate, arrange scallions, peas, asparagus, radishes, cucumbers and strawberries.

Garnish with pea shoots for height.

Drizzle with vinaigrette as desired.

Combine first 3 ingredients in a small bowl. Feel free to use any acid in place of lime juice, lemon juice or flavored vinegar.

Gradually add oil, stirring with a whisk. Add salt and pepper to taste.
