Farro, Mango and Grape Salad

 2 cups cooked Farro
 1 mango, cubed or sliced
 1 cup grapes, halved
 2 cups spinach
Orange Vinaigrette
 ¼ cup Balsamic Vinegar
  cup olive oil
 1 tbsp orange juice
 1 tsp honey
 ½ tsp dijon mustard
 ½ tsp salt
 ½ tsp turmeric
 dash of chili powder
Honey Roasted Pecans
 1 cup raw pecans
 ½ tsp cayenne pepper
 1 tsp cinnamon
 1 tbsp butter
 2 tbsp maple syrup
 pinch of salt
Orange Vinaigrette

Mix orange juice and honey.

Add Balsamic Vinegar and drizzle in Olive Oil while whisking the mixture.

Add remaining ingredients and whisk until mixed thoroughly.

Honey Roasted Pecans

Preheat oven to 350°.

In a medium mixing bowl, combine all ingredients adding pecans last. Mix to coat then spread pecans onto a sheet tray.

Roast for 8-10 minutes. Watch carefully and do not overcook. Substitute sunflower seeds for pecans.

Salad

Cook Farro.

In a medium mixing bowl, toss greens and cooled Farro with 1/2
cup Orange Vinaigrette Dressing.

Combine with grapes and mangos. Add Honey Roasted Pecans prior to serving.
