Easy Bok Choy

 2 Baby Bok Choy
 Olive Oil
 1 tbsp grated giner
 ¼ cup soy sauce

Cut Bok Choy in half lengthwise. Rinse and dry the halves

Drizzle cut sides with olive oil, salt, and pepper

Place pan over medium heat and add a small amount of oil. Lay flat cut side of Boy Choy in warmed pan

Add ginger and cover with lid. Cook 3 minutes or until bottoms are browned and tender.

Turn Bok Choy over and add soy sauce. Cover and cook for an additional 3 minutes.

Plate and serve immediately
