Deconstructed Guacamole

Yields2 Servings
 2 Avocados "ripe"
 2 tbsp Red onion, chopped
 1 tbsp Cilantro, fresh - chopped
 1 tsp Jalapeno, minced
 1 tsp Lime juice
 Salt, to taste
 1 Tomato, chopped and seeds removed
 ½ cup Bell pepper, diced
 1 cup White beans, canned - rinsed and drained
Serving Suggestions:
1. Use it to dress up a lettuce salad and serve with a spicy dressing.
2. Serve in a wrap with hummus.
3. Top it with an egg.
4. Leave out the beans and put it on a fish taco.
5. Use as a topping with a pinto bean tostada.

1. Wash hands and produce.
2. Cut both avocados in half, carefully removing the pit.
3. Cut up the avocado into chunks by making crosswise cuts. Repeat with remaining avocado halves.
4. Scoop out the diced avocado, place in a bowl and sprinkle with lime juice.
5. Mix onion, cilantro, jalapeno, tomato, peppers, and salt with the avocado.
6. Gently fold in the beans.
7. Serve immediately adding a lime or cilantro for garnish.
