Saute sliced onion for 15 minutes. Keep temperature to medium; you want a light brown color for the best flavor.
Add chopped asparagus and diced potato, saute with the onions for a few minutes. Add stock, bring to a boil and reduce to simmer until vegetables are soft. In small batches, move the pan mixture to processor or blender. Puree until all pan ingredients are smooth. You may need to puree in batches.
If you are using a blender remove the middle cap to allow the steam to escape, place a clean towel on top. Using a towel with a blender is always a good idea when working with hot ingredients.
