Colorful Root Salad with Greens

Yields2 Servings
 3 cups Assorted greens
 2 Radishes, thinly sliced
 ½ Orange carrot, sliced
 ½ Purple carrot, sliced
 ¼ Red bell pepper, sliced
 ¼ Orange bell pepper, sliced
 ¼ Yellow bell pepper, sliced
Maple Dressing
 ¼ cup Maple syrup
 ¼ cup Balsamic vinegar
 2 tbsp Stone ground mustard

1. Wash hands and produce.
2. Tear romaine lettuce with a few greens added.
3. Assemble the salad, starting with a base of greens.
4. Arrange radishes, carrots and peppers.
5. Serve with Maple Dressing.

Pro Tip:
Slice radishes and carrots ahead of time and store in cold water until ready to serve.

Maple Dressing
1. Place all ingredients in a blender for 45 seconds or until completely mixed. A
mason jar with a tight fitting lid can also be used to mix the dressing by hand.
