Bruschetta Chicken
Yields1 Serving
 4 Chicken breasts, skinless & boneless
 1 cup Zesty Italian dressing
 1 tsp Garlic powder
 ½ tsp Black pepper (ground) divided in half
 4 oz Mozzarella cheese (sliced)
 3 Roma tomatoes, diced
 2 tbsp Red onion, diced
 1 tsp Garlic (fresh) minced
 2 tsp Lemon juice
 2 tbsp Basil (fresh) chopped
Note: Bruschetta can be made in advance and held in the fridge until ready to serve.

1. Wash hands and produce.

2. In a large bowl, combine chicken, Italian dressing, garlic powder and 1/4 teaspoon of black pepper. Stir to combine and coat the chicken evenly with the seasonings. Place in plastic bag to marinate 4 hours or overnight.

3. Remove chicken from bag, pat dry and grill chicken over medium-high heat for 6-8 minutes per side or until cooked through to an internal temperature of 165 degrees.

4. While chicken is cooking, prepare the bruschetta. In a medium bowl, combine tomatoes, onion, garlic remaining black pepper, lemon juice, basil and stir well.

5. Once chicken is cooked through, top each with a slice of mozzarella cheese and cook for about 1 minute longer until cheese is melted.

6. Top chicken with tomato basil topping, drizzle on balsamic and serve.
