Broccoli – Cauliflower Deli Salad

Salad
 1.50 cups broccoli, chopped into bite size florets
 1.50 cups cauliflower, chopped into bite size florets
 ½ cup carrot, shredded
 ½ cup red onion, diced
Marinade
 ¼ cup extra virgin olive oil
 ¼ cup olives, pitted and sliced
 1 tsp fresh garlic, minced
 1 tbsp lemon juie
 pinch of salt
Garnish
 ¼ cup parsley, minced
Salad

In a medium bowl, combine finely chopped broccoli, cauliflower, carrots and red onion.

Marinade

Mix olives, garlic, lemon juice, and salt.

Slowly whisk in olive oil to combine ingredients.

Finish

Spoon Marinade over salad ingredients.

Cover and refrigerate for at least one hour and up to 3 days.

Sprinkle with minced parsley if desired.
