Black Bean Omelette

Ingredients

 2 large eggs (room temp is possible)
 cheese or nutritional yeast
 ½ cup black bean base warmed
 oil or butter (clarified if available)

Directions

Warm black bean base.

Whisk eggs till combined. Heat oil or butter in 10 inch non stick pan, pour in eggs. Let egg edges set and using spatula, let uncooked eggs on surface run under omelet. Repeat till omelet is still moist on top but eggs are set.

Add cheese and bean mixture. Slip omelet out of pan and serve immediately. Garnish as desired.
