Warm black Bean mixture in skillet when warm remove to bowl and wipe out pan.
Beat eggs, salt and pepper together. Add fat to pan and cook eggs three minutes, still slightly moist or
until your consistency preference. Add beans and cheese or nutritional yeast.
Slightly warm tortilla shells, place eggs with beans in shell add condiments of choice, roll up tortilla and serve.
Hot Sauce, salsa or sour cream / yogurt all make good condiments.
