Clean and dry your fresh berries.
Mash berries and place in small sauce pan. Add vinegar and maple syrup to
berries in pan. Bring to a boil.
Cover, reduce and simmer for 10 minutes.
Let stand 4 hours then strain. Keep covered and store in refrigerator.
Combine first 3 ingredients in a small bowl. Feel free to use any acid in place of lime juice, lemon juice or flavored vinegar.
Gradually add oil, stirring with a whisk. Add salt and pepper to taste.
