Beet and Cheese Nibbles
Ingredients
1 box of favorite crackers
3 large beets - roasted
julienne carrots
sliced greens
favorite cheese
balsamic vinegar (thickened)
Directions

Slice beets horizontally ¼ inch thick.

Using small cookie cutters, cut beet slices into shapes.

Working in layers, place greens on cracker, top with beet, cheese, Julienne carrot and balsamic glaze. Honey also tastes good on top. My favorite cheese with beets is blue cheese but feta would work well too.
