 1 Red Onion-sliced
 1 cup Vinegar- (apple cider vinegar is my favorite)
 1 cup very hot or boiling water
 1 tbsp salt
 ¼ cup maple syrup

 5 peppercorns

Wash Hands.
Cut onion thinly(a mandoline is useful). Place red onion slices in a pint canning jar.
Mix hot water with salt, and maple syrup until dissolved. Add vinegar and let cool. Pour the liquid mixture over the onion slices in the jar, ensuring all onions are covered with the cool brine mixture.
Cover the jar and keep in the refrigerator. Let sit for a few hours before eating.
