Make your mornings easier with recipes. Some quick weekend preparation can make weekday mornings more manageable.

Muffin Mix Tips:

Ingredients:

1 Box Muffin Mix

1 Cup fresh blueberries

1/4 Cup ground Flax seed or flour. (Grind whole flax seeds in a blender. Store unused ground flax seeds in the refrigerator to prevent spoiling.)

Streusel:

2 Tablespoons chopped walnuts

2 Tablespoons oatmeal

1 Tablespoon brown sugar

1/2 Teaspoon cinnamon

1 Tablespoon butter- room temp

-Combine the first four ingredients, then work in butter. Sprinkle over muffins before baking.


Directions:

Wash hands and berries

Using the box mix, add all the recommended ingredients but also add ground flaxseed and fresh blueberries. (With thinner batter, coat the blueberries with flour before adding them to the mix.)

Replace oil with applesauce if desired.

Follow the directions on the package for baking and cooling.



Egg Wrap:

Ingredients:

1 Egg

1 Tablespoon flour (optional)

Oil or cooking spray

Possible add-ins:

Turkey and cheese

Olives, diced peppers, spinach, thinly sliced red onion and cheese of choice

Avocado, cheese and turkey


Directions:

Wash hands

Break the egg into a medium bowl and whisk completely.

Then add the flour slowly, whisking the whole time. If a few small lumps remain, they will disappear while cooking.

Heat a non-stick saute pan over medium heat and add oil or cooking spray.

Whisk the egg into the pan, coating it evenly.

Cook for 30-60 seconds, flip over, and repeat on the second side.

Remove the egg and place it on a plate to cool.

To make more wraps, repeat the process using one egg per wrap.

Layer your desired ingredients down the center of the egg wrap.

Roll, cut in half, and serve or store.

Wraps can be stored in a covered glass container and eaten later cold or reheated. An air fryer can be used to heat the egg roll at 300 degrees for a few minutes.



Protein Balls:

Ingredients:

1/2 Cup peanut butter

1 Cup oatmeal

1/2 Cup honey

1/4 Cup ground flax seeds

1 Teaspoon vanilla extract

1/2 Teaspoon salt

1/2 Cup chocolate chips

Possible add-ins:

Shredded coconut

Chopped nuts

Cinnamon

Raisins

Chia seeds

Hemp seeds


Directions:

Wash hands

Place all ingredients in a large bowl.

Stir until combined.

Using a one-ounce scoop, shape them into balls. For Bars: Transfer to a 9′ x 9″ pan and press flat. Cool and cut into bars.

Store in a tightly sealed container in the refrigerator for a week or in the freezer for three months.
