Zucchini Fritters

 ½ cup corn starch
 2 tbsp baking powder
 ½ tsp salt
 ½ tsp pepper
 3 cups zucchini shredded and drained
 ½ cup pesto
 2 large eggs - beaten
 ½ cup cream
 ½ cup diced onions
 Oil for saute

In large bowl mix dry ingredients, corn starch, baking powder, salt and pepper.

Add shredded drained zucchini, onion, pesto, eggs and cream to dry mixture, don't over mix. Let mixture sit for 10 minutes.

Heat oil in large skillet, medium heat. Scoop raw vegetable batter and flatten in pan. Cook until golden, brown and delicious about 2-3 minutes. Turn once and let cook 1-2 minutes more.

Serve immediately .

Garnish with sour cream or yogurt

To drain zucchini: Place zucchini in clean dish towel, cheesecloth or milk nut bag. Squeeze zucchini until juice is squeezed out.
